What do you mean take out?
Are the subtitles embed or not?
Because if they are, you can't "take them out".

Υes. You can do it with convertxtodvd.
At least that's how I'm doing it.
It has an option saying "add or remove audio stream".
But I'm not sure if it matches to all occasions.

you can do it of course, just extract m2v stream (video), and add audio in some mpeg2 muxing program
