As I mentioned before, codes for subtitles are not standard. The subtitle formats themselves don't support much formatting and it's left to the developers to implement it anyway.
Depending on the format you can use html formats.
Most subtitles (NOT ALL!) some in .srt format (SubRip). This format theoretically supports using html tags like <b> and <i>. But it's up to the video players to understand these codes.
You may also want to consider using Jubler on your mac to edit the subtitles. It's complicated at the beginning (especially if you come from a play text editor) but when you get used to it it's very powerful. You also know the resulting files will be readable by all players and best of all, the Jubler developer is a really nice person open to suggestions so you can improve the program by giving your feedback.
